Ancient Grain Focaccia
Super easy bread recipe to have in your back pocket!
In the bowl of your stand mixer, mix together flour, salt & yeast
Add Olive OIl & Water
Using your dough hook, start on low speed & gradually increase until the dough comes together
Let it run for 1-2 min or until the sides of the bowl are clean
Remove dough, swirl a tablespoon or so of Olive oil in the same bowl.
Form a ball by tucking in edges toward the bottom, creating a nice smooth, round top,
Flip & turn in the olive oil so the dough ball is oiled on all sides, & place it smooth side up in bowl.
Cover with plastic & set in warm place for minimum 1 hour
Place a 12" cast iron skillet in the oven & set the temp to 475º while the dough is rising.
After the dough doubles & becomes soft & pillowy (1-2 hrs). remove the HOT pan from oven.
Holding dough like a steering wheel, let gravity help you make the dough wider, then place it in the hot skillet.
Using the rounded end of a wooden spoon, gently stretch dough to edges (should be even across the top) & poke some indents all across the surface, careful not to poke through to the bottom of pan
Drizzle with more olive oil & sprinkle your favorite herbs/seasonings on top
Bake for 10-12 min until top is deep golden brown
Remove & place on a wire rack to cool.
