Biscotti Recipe - Versatile, Simple & Healthier!

Perfect with a latte & healthy enough to be a guilt-free treat!
Ingredients
3 Cups Ancient Grain Flour
Add To Cart1 Cup Organic Coconut Sugar
1 Tb Baking Powder
2 pinches Salt
2 Tb Flax (ground) + 6 Tb Water (or Aquafaba) Let sit for 30 min+
(this is your egg substitute)
2 Tb Olive Oil (flavored or plain)
2 Tb Maple Syrup
splash Vanilla
up to 2 Cups mix-ins (I used organic dried cherries & Lily's Dark Chocolate Chips)
Optional: Ghiradelli's Dark & White Melting chocolate
Sprinkles
Directions
Mix dry ingredients: flour, coconut sugar, baking powder, salt
Mix wet ingredients: egg substitute, olive oil, maple syrup, vanilla, milk
Add wet to dry & mix with hand held mixer or stand mixer until dough becomes "shaggy"
Add mix-ins of your choice
Knead together with your hands until it becomes cohesive & mix-ins are evenly dispersed.
Divide in 2 & shape in long flat logs on a parchment-lined baking sheet.
Bake in preheated 350º oven for about 15-20 min
Remove from oven to let cool for at least 15 min & lower oven temperature to 300º
Once cooled, slice in 1/2" pieces & lay the slices on the baking sheets (on their side)
Bake for 20 min.
Flip & bake again for 20 min.
Let cool & eat as they are (healthiest version ;-)) or decorate as desired. (Drizzle melting chocolate, dip in chocolate, add sprinkles, nuts, etc)
