Homemade Pasta using Ancient Grains

Easy enough to make on a weeknight!
Ingredients
3 Cups Ancient Grain Replacement Flour
Add To Cart1 tsp Sea Salt
5 Whole Eggs
Directions
In a large bowl, mix together the flour & salt & make a well in the center
Add the eggs to the center & whisk together using a fork
Slowly incorporate the flour a little at a time until the dough starts coming together. Turn it out on your work surface
Start kneading your dough & slowly use just enough flour so that your dough no longer sticks to the surface. (you will probably have extra flour on the side - easier to see in the video below)
Knead the dough for 10 min
Wrap dough in plastic & let it sit on the counter for 30 min
After resting period, Divide dough into 4-5 equal parts (doesn't have to be perfect) & start rolling it out always using the widest setting first. Note: make sure you have a bit of flour on your dough to prevent sticking in your machine
Gradually go from widest setting (7) to thinnest setting (1)
On a floured surface (& lightly flour the dough sheet), roll up both ends to meet in the center. (See video)
Slice into desired width, roll back out & hang on pasta drying rack
With your water at a rapid boil, add 1/4C Salt & cook pasta for only about 2-3 min or when it starts coming floating on the surface.
Drain in colander or add directly to your sauce!

I have made this pasta recipe twice now. Each time it has turned out beautifully. The simple ingredients, the ease of working with the pasta dough, and delicious flavor has my entire family asking for more.
