Plant Based Pasta Cream Sauce with Veggies
Macadamia Nuts make this a delicious creamy sauce without using any dairy! Perfect accompaniment to my fresh pasta recipe!
1 Cup Raw Macadamia Nuts, soaked overnight
1 Cup Water
3 Cloves of minced garlic, divided
1 Small Thinly sliced Red Onion
1 Cup of Frozen Peas
1 Cup of your Favorite Mushrooms, chopped
Plus any of your favorite veggies - Make it your own!
Fresh Mint or Basil
2 T EVOO
Salt & Pepper to taste
2 Tb Nutritional Yeast
2 Tb Your Super Muscle Power Protein Mix (optional)
Make your cream sauce
In a food processor or blender, add soaked macadamia nuts (can also use cashews), water, 1 clove of minced garlic, nutritional yeast, protein powder if using and S & P
Blend until smooth & set aside
Saute your onions in a small amount of Extra Virgin Olive Oil until nice & caramlized. Season w/ S & P
Add your mushrooms, peas, etc. (Re-season with S&P)
Add the remaining 2 cloves of minced garlic, stir until well dispersed & then add your cream sauce
Pour over your cooked, drained pasta or add cooked pasta directly from boiling water to sauce pan & toss!
Garnish with freshly torn mint or basil
