Spicy Tomato & Basil Soup
This is definitely one of my faves! You can make it as spicy as you'd like or not at all! Healthy, simple to make & a total crowd pleaser.
Chop Veggies in Vitamix
Clean Carrots & Celery & chop into large chunks
Peel onion, chop into large chunks
Add veggies to Vitamix container & cover with water
Turn Dial to 10 & pulse 5 or 6 times
Drain in colander
Make the Soup
Sauté veggies in a dutch oven/pot in a drizzle of olive oil. Don't forget to salt & pepper
After veggies are soft, add garlic & cook til fragrant - make sure it doesn't burn!
Add this cooked veggie mixture to Vitamix with entire can of tomatoes, roasted peppers, chili paste & veggie broth
Starting on low, increase speed to 7 & let it run for 5 min.
Check for seasoning. Add salt & pepper to your taste.
In a small bowl, whisk together the cashew powder with a tablespoon or 2 of water. Add to soup along with a handful of fresh basil. Run for about 30 sec to incorporate.
Serve directly from Vitamix container or return to pot on stove & hold at a simmer.
Drizzle the top with olive oil & garnish with a pretty sprig of basil!
