Steamed Buns (Siaopao/Bao Buns) w/ Plant Based Filling (or use your own!)

This dough is very versatile! You can put your favorite filling inside savory or sweet!

Ingredients
5 Cups Ancient Grain 1:1 Replacement Flour

pinch of salt
2 C Warm Water
1 Field Roast (Celebration Roast), diced into pea-sized pieces
available at most grocery stores in the Vegan section
3 Cups of your favorite Veggies, diced into pea-sized pieces
2 Tb Coconut Aminoshttps://amzn.to/30RgyjZ
1 Tb Avocado Oil

Directions
Make the dough
In a mixer w/ dough hook, combine all dough ingredients & let run for 5 min.
Cover & let rise for 1 hr, meanwhile, make your filling if you haven't already
Make the Filling
In a cast iron skillet, sauté the field roast in avo oil, add veggies then add coco aminos, let cool. drain in a collander if too much liquid
Form the Buns
Cut 18 squares of wax paper
Divide dough into 18 pcs (approx 60-65g each) & form into rough discs
using a rolling pin, roll out into about a 5" circle, 1/4" thick
Fill circle of dough with 1(ish) Tb of filling, gather sides and twist top, making sure not to let the filling come thru dough. Place on wax paper square
Let rise for 20 min & prepare Bamboo Steam basket fitted into a shallow pan, filled with about an inch of water. Set on high to bring water to boil.https://amzn.to/2SF7uKL
Steam the Buns
Steaming 6 at a time (3 on each tier), making sure they are well spaced apart) steam in batches for 15 min.
