Supercharged Tofu Scramble with Charred Brussel Sprouts & Fresh Turmeric Root
Hard to make a more nutritious breakfast than this one!
1 pkg Extra Firm (or Super Firm) Organic Tofu, Pressed for 15-30 min
1 thumb of fresh Turmeric Root
1/4 Onion Sliced thin
4-5 Brussel Sprouts, cleaned & sliced
2-3 Mushrooms, sliced
1-2 Tb Olive Oil
1 Tb Nutritional Yeast
Kala Namak (Black Salt)
Black Cumin Seed (Nigella Sativa), toasted in a dry pan on med heat for a few min
Salt to taste
Press Tofu by weighing it down in between a towel or paper towel & place heavy pan(s) on top for 15-30 min. Crumble with your hands
In a hot cast iron skillet w/ a drizzle of olive or avocado oil, char Brussel Sprouts
add onion until soft & caramelized
add mushrooms - don’t forget to lightly salt after each addition.
Add crumbled tofu & grate fresh turmeric on top & stir until the yellow color is even.
Add Nooch & black salt. (Feel free to adjust S & P)
Top with toasted black seeds & EnJoy!
Serve with a delicious piece of Ancient Grain Sourdough bread (find recipe here on my website!). Can also use in a tortilla as a breakfast wrap! Yum!
