Your Super Curry (Red Lentil, Vegan)

I make this recipe a lot. My whole family enjoys it & I usually have the ingredients on hand. It's adapted from: https://www.rainbowplantlife.com/blog/vegan-red-lentil-curry, which is a great recipe to start with. I just changed to few things to suit my taste & I LOVE incorporating Your Super Mixes whenever I can!
1-2 TB Organic Refined Coconut Oil
1 Cup Organic Red Lentilshttps://amzn.to/3gEuUtN
1 14 oz Can Diced Tomatoes
1 14 oz Can Organic Coconut Milk (Full Fat)
2-3 Cups Organic Veggie Broth
1/2 Red Onion, chopped
1/2 of (each) Red & Yellow Bell Pepper, medium dice
1-2 Serrano Chili, chopped
1 Cup or more Broccoli Florets, if you like them.
Fresh Ginger & Turmeric, grated (about 2" each)
3 cloves garlic, minced
1 tsp Garam Masala
1/4 tsp Cayenne Pepper (to taste)
3 TB Almond Butter
Juice of 1 small lemon
2 TB Your Super Mellow Yellowhttps://yoursuper.krym8q.net/ezrR6
Salt/Pepper to taste
In a dutch oven (or similar pot), heat oil.
Sautee onion, peppers, chili until soft.
Add Garam Masala, Cayenne & grate in fresh ginger & turmeric
Add minced garlic & stir in but careful not to let it burn.
Add Lentil, diced tomatoes & 2 Cups veggie broth.
Lower heat, cover & simmer for 20-25 min.
Make sure lentils are tender (add more broth if needed at this point). Cook another 5 min if lentils are not fully cooked.
Add Almond butter & Coconut milk.
Optional: blend with Immersion blender (or remove 1-2 Cups & blend in blender & return to pot)
Add broccoli, if using.
Add juice of 1 lemon. Stir in Mellow Yellow & serve with Homemade Naan!
